Oh how I love Spanish omelette. Since this month, we tried out Spanish food, my tutorials have been based around Spanish delicacies. Last night my mother made me one of my favourite comfort foods. In Spain, you can just pick these up in the supermarket as if it's eggs but in England that's not the case. So here's my mum's foolproof way of making Spanish omelettes.
You'll need:
3 Potatoes
1 1/2 Onions
6 Eggs
Olive oil for frying
Salt & Pepper (duh)
Just a general rule, for every potato used, you'll need two eggs.
Let's cook!
First we chop up the potatoes and onions into fairly fine slices.
Then we soften the onions and potatoes, this takes around 15 minutes. Add seasoning.
Put the potato/onion mixture into a bowl with whisked eggs. Then cook the mixture as you would do with any omelette.
So when you see the sides of the omelette form shape the hardest obstacle has arrived. Flipping this bad boy. I must admit I am terrible at this hence I always make mini tortillas whilst my mother makes the family sized toritillas. I once tried and the omelette dropped on the floor so I just leave this bit to my mum.
Using a plate or lid larger than your pan, cover the pan, flip upside down (like my mum has expertly done) Then slide back the omelette into the pan so the other side can cook.
TAH DAH!
Look at that beauty! Perfect served hot or cold which makes it perfect for picnics or when you just cannot be bothered to heat things up, this is the perfect grub for any lazy person. You can also add seafood, chorizo or vegetables to your omelette, the possibilities are endless!
Kudos to my mother for being awesome.
